Watermelon, tomato and feta cheese salad demonstration

This colorful salad is sweet, bright and full of summer flavor. Cooking Time: 20 minutes Ingredients 2 avocado(s) (hass variety works best) 1/4 seedless watermelon 1 head(s) boston lettuce 1/2 red onion 3 tomato(es), any variety 8 oz feta, reduced-fat feta also works 2 shallot(s) 4 tbsp white wine vinegar 4 tbsp olive oil 4 tbsp canola oil 2 tbsp honey 1 lemon(s)to taste saltto taste pepper Instructions 1. Peel watermelon and cut into bite size pieces. 2. Peel and slice avocado, squeeze a little lemon juice on it to prevent it from browning. 3. Separate lettuce leaves with hands, wash and dry thoroughly. 4. Slice red onion very thin. 5. Cut tomatoes into chunks and crumble feta cheese. 6. Place all of the ingredients on a serving platter, starting with the lettuce and continuing with the remaining ingredients making sure to distribute them evenly. 7. Make the dressing by dicing the shallot and place in a mixing bowl. 8. Add the vinegar to the shallots and mix well. 9. Whisk in the oils (one at the time) making sure to pour slowly and whisk continuously. 10. Finish the dressing with honey, remaining lemon juice, salt and pepper.Notes: -Serve dressing on the side and only use as much as you need for your portion of salad. - If you are watching calories, leave out the canola oil.
