I made a little gadget to help make the worlds best fishcakes. Many recipes for fishcakes require a lot of filler to hold the ingredients together as you add it to the pan. With my little gadget, you can use very little cornmeal or flour to hold the cake together while it is in the pan cooking up and getting firm from the heat. I add lots of fresh minced vegetables with one egg and a can of fish and a small amount of cornmeal. Cook the cakes on very low heat and flip when starting to brown to the other side and then back again a couple of times to give the vegetables time to cook. This results in very hearty fishcakes that are light and crumbly without the thick heavy rubbery texture of many fishcakes. Not many know, but sardines when canned in tomato sauce have very little sardine smell or strong sardine taste, They make great fishcakes and are the one of the lowest cost good seafood choices you can make. You can also use this little gadget to make sausage patties or stack vegetables to make a salad plate or desserts too.
