3.6.4 Define Denaturation

Denaturation is when a protein undergoes a structural change which results in the loss of its biological properties. In the case of an enzyme this is when it looses its three dimensional structure as a result of excess heat or changes in pH beyond its optimum, and thus the shape of the enzyme's active site changes. The enzyme is therefore no longer able to bind to the substrate and so no longer able to catalyze the chemical reaction.
