In the mix window, click in the top portion of your audio track. This will allow you to set an insert by hovering your mouse over plug-in and choosing from the drop down menu that appears. You can choose something like Mini Grand piano under the Instrument option. This will make your MIDI controller, or keyboard, sound like a grand piano. If you can't hear anything, then you probably don't have the correct output selected. You'll want to make sure your output selected refers to the same channel your speakers or monitors are connected to. For a MIDI track, the process is similar. Click on All under I/O on the MIDI track in the mix window. Then, you'll be able to choose which input or MIDI controller that's connected to your computer you would like to use. Some audio interfaces feature MIDI inputs built into them. Others do not, so you'll need to have a separate MIDI controller connected in order to record MIDI.
