Once you record in this mode, you cannot undo what you've done. It's meant to emulate an older method of recording to tape, in which what you record over becomes erased. To set up destructive recording, navigate up to the transport window and right-click on the record button. Choose Destructive from the drop down menu that appears.? You could also navigate to the top menu bar and click Options -- Destructive Record.? Make sure the Record Enable button is on before you record to a track. To re-record and erase over what you have, simply place the play marker before the audio region you want to record over. If you make a mistake while in Destructive Record Mode, you cannot undo what you've done.
