How to Make a Bacon Spinach and Goat Cheese Omelette

What You'll Need --------------------------------------------------------------------- 3 medium eggs* 1 cup spinach, chopped * 2 tbsp bacon, chopped * 1 tbsp goat cheese, crumbled * Salt and pepper to taste * 1/2 tbsp butter * 1 tbsp olive oil * Nonstick frying pan * Large bowl * Spatula * Whisk Preparation --------------------------------------------------------------------- Set burner to medium. Heat nonstick frying pan.2. Add olive oil to frying pan. Spread it around so that it covers the entire surface of the pan. 3. Add butter to pan and let melt. 4. Pour eggs into large bowl and whisk. Add a pinch of salt and pepper to taste (optional). You can also add milk if you like, but Judith prefers the eggs by themselves. Cooking Process --------------------------------------------------------------------- Gently run the butter around the entire bottom of the frying pan. This will ensure that nothing will stick as it cooks. Add bacon and let fry for a minute or two, then add spinach and let cook.2. Wait until the bacon is golden brown and the spinach has wilted, then pour eggs into the frying pan. 3. Use your spatula to mix everything together well. You want to make sure that all of the egg mixture gets cooked. You can pick up the pan and swirl the eggs around until they cover the entire bottom of the pan. Move your spatula around the edges of the eggs to make sure the egg isn't sticking to the pan.5. Add goat cheese. 6. Flip the omelette quickly so it doesn't tear. 7.
