What You'll Need --------------------------------------------------------------------- Ingredients * 3 medium eggs * 2 tbsp cheddar cheese, shredded * 1 tbsp olive oil * 1/4 tbsp butter * Salt and pepper to taste (optional) * Milk to taste (optional) Equipment * Nonstick frying pan * Large bowl * Spatula * Whisk Preparation --------------------------------------------------------------------- 1. Set burner to medium. Heat nonstick frying pan. 2. Add olive oil to frying pan. Spread it around so that it covers the entire surface of the pan. 3. Add butter to pan and let melt. 4. Crack eggs into a large bowl and whisk. Add a pinch of salt and pepper to taste (optional). You can also add milk if you like, but Judith prefers the eggs by themselves. 1. Gently run the butter around the entire bottom of the frying pan. This will ensure that nothing will stick as it cooks. 2. Pour the egg mix into the pan and spread the eggs around so they cook evenly. 3. While cooking, add the cheddar cheese to the mix. Sprinkle all of it on top of the eggs, and then move your spatula around the edges of the eggs to make sure none of it sticks to the pan. 4. Flip the omelette quickly so it doesn't tear. 5.
