Identify Forged Knives --------------------------------------------------------------------- * Forged knives are known for their appearance as their blades are literally forged from one single piece of metal, making them more expensive than other knives, but also longer-lasting. * Oftentimes, there will be a large piece of metal called a "hilt" or "bolster" that is between the handle and the blade, plus a full metal "tang" that extends to the end of the handle; the tang looks like a stripe of metal around the handle. * If the handle has three rivets, it is a forged knife. Many of these triple-riveted handles are made of a wood composite that may include rosewood, oak and maple. * Other types of forged knives will have "granton" edges, or small indentations, along the blade that prevent whatever you're cutting from sticking to the knife. * Finally, the weight of a forged knife is noticeably greater than other knives.
