What You'll Need --------------------------------------------------------------------- Ingredients * 1 tsp extra virgin olive oil* 3 eggs* Salt and pepper, to taste * 1/4 tsp Parmesan, shaved* 1/2 zucchini, chopped, saut?ed and lightly salted Equipment * Small pan * Burner * Medium bowl * Fork * Spatula Instructions --------------------------------------------------------------------- 1. Heat pan on burner at medium-high. Add olive oil.2. Crack eggs into mixing bowl. Lightly beat together egg yolks and whites. Add salt (if desired, since Parmesan is already salty), pepper and Parmesan.3. Drip small amount of egg into pan to test heat. If sizzling, heat is high enough. Add mixture. Once mixture has partially solidified, mix in zucchini. Continue cooking until mixture has fully solidified.
