My name is Barbara Esses and I do events for a living. I'm Ruthie Hecht; I'm an event planner and I work with and for my mother. We're going to teach you the do's and don'ts for the perfect wedding. Planning a wedding menu is a lot of fun. First of all you should get to taste a good deal of the food. Because you may not eat it that night. So in advance, you'll taste it and you'll know what it will look like. And that's a lot of fun. And that should be bride and groom and parents, if the venue is willing. Planning a menu should include knowing the guest list. Because if you know your guests--and clearly, you should know your guests if you're inviting them--then you know their eating habits and you know the foods that would please them the most. So it's not about cost, necessarily. It's about knowing what style of food your guests like or picking a particular style of food because you just think it would be fun. Whatever it is, make sure you have enough vegetarian, enough green color. All the food should not be brown and fried even though that one likes that the best. One should have variation of color. When looking at your papers, think about the color of food that is coming on the table, so that there is enough variety. Because remember that people eat with their eyes as well as with their mouth.
