Step 1: Break the bread Tear or cut the bread into bite-size pieces to get 9 to 10 cups of bread. Tip Use a light white bread like French or Italian, or an egg bread such as brioche or challah. Day-old bread is best. Step 2: Fill the baking pan Lightly grease the baking dish and then add the bread pieces. Mix in the raisins, chocolate chips, or berries. Tip Use fresh raspberries, blackberries, or blueberries. Step 3: Melt the butter Melt the butter and set it aside to cool. Step 4: Make custard Beat the eggs and sugar with a whisk or mixer for 4 minutes, until they're thick and light yellow. Add the vanilla and cinnamon, and then beat in the cooled butter, the milk and cream, and the rum or brandy. Step 5: Add the custard to the bread Pour the custard over the bread. Make sure all of the bread pieces are submerged. Step 6: Draw a hot bath Place the baking dish inside a large pan or roaster. Add hot water to the pan until it reaches halfway up the side of the baking dish. Step 7: Bake Bake in a 350 degree oven for an hour. When a toothpick inserted in the center comes out clean, the pudding is done. Step 8: Top and eat Let the pudding cool briefly before serving. Top it with ice cream or whipped cream, and enjoy.
