Warning This recipe involves very hot cooking oil, so be careful and never leave the oil unattended. Step 1: Mix ricotta, mozzarella, Parmesan, milk & eggs In a large bowl, mix ricotta, mozzarella, Parmesan, milk, and eggs until all the ingredients are well blended. Step 2: Mix in salt & pepper, flour & baking powder Mix in salt and pepper, flour, and baking powder to the wet ingredients. Set aside. Step 3: Heat oil to 350 degrees In a heavy pot, heat 2 quarts canola oil to 350 degrees, keeping a close watch on the temperature with a candy thermometer. Tip Start heating the oil 15-20 minutes early. Step 4: Spoon batter into oil Once the oil reaches 350 degrees, or slightly over, carefully spoon the batter into the hot oil. Tip To avoid, or at least minimize, hot oil splashes and burns, make sure to hold the batter spoon as close as possible to the surface. Step 5: Cook 8-10 minutes Cook for 2-3 minutes, depending on the size of the fritters, until they're a dark golden brown. Step 6: Remove fritters & let cool Remove fritters from oil, place on paper towel, and let cool for 4-5 minutes. Did You Know?
